Bircham Windmill Cheese
Standing proud in the heart of Norfolk for over 100 years, Bircham Windmill is one of the very few functioning windmills left in the country. It's open to visitors too, for camping, afternoon tea, and sheep milking at 2pm!
After the sheep have left the parlour, the milk is taken to the kitchen to make delicious local cheese. There are three different kinds made at the mill:
- Norfolk Charm - Wensleydale-style, matured for 3 months for flavour, good all-rounder for any cheeseboard.
- Millers Fancy - Feta-style - milky and less salty than shop-bought alternatives, creamy and smooth.
- Millstone Blue - A blue vein cheese, creamy and mild, great on salad or a biscuit.
